Does Microsoft Security Essentials interfere with ESET NOD32 AV and Windows Defender?
Which AV should I keep? I’m wondering if it’s fine to keep two anti-virus programs running at the same time.

Do not have them running at the same time!
They will fight each other and you will end up with a slow computer.
Microsoft Security Essentials handles it all. It will also disable Windows Defender, but will not touch NOD32.
You would need to uninstall NOD32 yourself.
Either that or stay with Defender and NOD32 as your defense.
